Salmon Xatonada

Xatonada (pronounced: Chatonada) is a dish from Garraf and Penedés on the Catalan coast. This summer version of the Xatonada consists of greens and cod combined with Xató (pronounced: Chato), a typical sauce from Catalunya, made of almonds, toasted hazelnuts, bread with vinegar, garlic, olive oil and ñora peppers.

Black cod with miso and sherry amontillado

Made famous by chef Nobu Matsuhisa, every bite of this creamy white masterpiece is lightly sweet and salty, with a buttery and delicate, flaky texture that melts in your mouth.
The black cod is marinated for three days in sherry Amontillado, white miso, and black garlic sirup. Serve with french lentils and spinach.
